I almost didn’t believe this one myself because it looks like fluff… but eats like soft candy. You start by making sugar-free Jell-O with half the water so it’s super concentrated. Let it cool until warm (not hot—this matters). Then gently fold in sugar-free Cool Whip, not stirring hard, just folding until it turns pale, airy, and cloud-like.
Pour the mixture into a shallow dish or silicone mold and chill until fully set. When you cut it into cubes, they hold their shape but melt slow in your mouth—light, fluffy, creamy, and not jiggly at all. It’s giving mousse, marshmallow, and fluff all at once. Zero chalky taste, zero heaviness, and totally bariatric-friendly portions.
