Step 1: Prepare the Filling
- Cook the beef and onion: In a large skillet over medium heat, cook ground beef and diced onion until browned and tender, about 8–10 minutes. Crumble the beef as it cooks. Season with salt and pepper.
- Add flavor: Drain excess fat, remove from heat, and let cool slightly. Stir in ketchup, mustard, and crumbled bacon.
Step 2: Assemble the Bread
- Preheat and prep: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
- Roll out dough: On a lightly floured surface, roll the French bread dough into a rectangle about 12×8 inches.
- Layer the filling: Spread the cooled beef mixture over the dough, leaving a 1-inch border. Top with chopped dill pickles and American cheese slices.
- Roll and seal: Carefully roll the dough from a long side into a tight log. Pinch seams and ends to seal, then place seam-side down on the baking sheet.
