1. Activate the yeast
Put warm milk, sugar and yeast in a bowl.
Mix gently and let sit for 10 minutes until foamy.
If it doesn’t foam, the yeast isn’t active.
2. Prepare the dough
Add eggs, melted butter and salt.
Add flour little by little.
Knead for 10–12 minutes until you get a soft, elastic and slightly sticky dough.
3. First take
Place batter in greased bowl.
Cover and let sit until it doubles in size.
4. Forming the roles
Remove the air from the mass with hands then
stretch the dough into a rectangle shape (1⁄2 cm thick).
Sprinkle the brown sugar and cinnamon evenly.
Roll tight and cut in 18 to 24 roles.
Place the roles in a greased mold.
Cover and let sit for 25 to 30 minutes until inflated.
