Bake at 200°C (fan-assisted) for 20-25 minutes until nicely browned.
Repeat for the second dough.

🍮 Step 2: Vanilla Butter Pastry Cream
Heat the milk with the vanilla until simmering.
In a bowl, whisk the eggs, yolks, sugar and cornstarch.
Pour the hot milk over it while whisking, then pour it back into the saucepan.
Thicken over medium heat, whisking constantly.
Once the cream has thickened, let it cool to 30-35°C, then add the softened butter in pieces with a whisk or food processor until you obtain a smooth and airy cream.
