100 g de sucre
1 teaspoon of vanilla sugar (or a few drops of vanilla extract)
100 g semi-skimmed fromage blanc (preferably ground)
80 ml vegetable oil
120 g all-purpose flour
1 teaspoon of baking powder
a pinch of salt
(optional) zest of half a lemon
Preparation :
In a bowl, beat the eggs with the sugar and vanilla until light and fluffy.
Add the cottage cheese and oil, then mix well (with a mixer or whisk).
In another bowl, mix the flour, baking powder and salt.
Gradually add the dry ingredients to the egg mixture, mixing until you have a smooth dough.
Pour the mixture into a buttered springform pan (for example, a 20 cm springform pan or a loaf pan).
Bake in a preheated oven at 180°C (350°F) (top and bottom) for about 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
Serving and storage tips:
Enjoy warm, sprinkled with icing sugar or topped with a dollop of whipped cream.
You can store the preparation for up to 3 days in an airtight container at room temperature.
It’s also perfect as a base for a cake: simply cut it in half and top it with your favorite frosting.
